In 2024, I went on the Paleo diet as part of the 75 Hard, and found it difficult to find a dessert that was sugar free, dairy free and oat free so I made my own. Mini Melanie was founded in 2015 by sisters Melanie and Diana Moss. Melanie grew up baking with their grandmother, and her hobby steadily grew into an obsession. While attending Northwestern University, Melanie studied in Paris and was Sous Chef at Cours de Cuisine atelier. She later attended the Institute of Culinary Education and honed her craft in the Michelin-starred kitchens of Babbo and Blue Hill at Stone Barns, where she was Pastry Sous Chef. The Evercake concept started as I was ordering flowers online while skimming Pinterest for my toddler's birthday cake. I wanted a beautiful cake that I could add to a cart and have delivered. Why didn't this exist? A few months later, The Evercake was born. We are different in that we are strictly buttercream based (no overworked fondant here). Our recipes are tried and true, slightly less sweet, and with designs aimed to be worthy of your celebrations. We don't have a traditional storefront with overhead to worry about it, which means we don't have to mark up our cakes to account for this.

Daniel Colonel loves telling stories through dessert. As a child, he was fascinated with food and always interested how it was made. He took his love for food, and sweet tooth to the Culinary Institute of America where he graduated in Baking and Pastry Management. Daniel's favorite part of the process is connecting with the couple and getting to know their love story. Wedding cakes with sugar flowers are his specialty but during the pandemic, he has began other sweet ventures including mini premium desserts that are served in cones and cookie boxes.
