Hi. I’m Emily. Mother, wife, and baker. I was diagnosed with psoriasis over 8 years ago shortly before discovering my husband could not tolerate any grains. While this time was rather difficult attempting to maneuver life with “dietary restrictions,” it was also a pivotal moment where I decided to continue making all the things I love (yes I have a sweet tooth). I embarked on an 8 year journey trying all the flours and substitutes in all my cherished recipes. I have found what works without compromising taste and texture. Fast forward three kids later who also deal with dairy, nut and gluten intolerances and I think I have found what works.

Choice Cakes was created with the purpose of allowing everyone to eat what they love while allowing me to do what I love. At Choice Cakes, we really believe in giving people want they want. We strive to create beautiful and delicious cakes, cupcakes and baked goods according to your needs, preferences and even design ideas! We are a full service bakery and would love to be part of your next family gathering, birthday party, anniversary or even work celebration.     If you're looking for a gluten free baker in NC, chose Choice Cakes!!! My fiancé and I are so grateful to have found Emily to create our wedding cake! She is the best of the best and takes food allergies very seriously. Her gluten free s'mores cake is truly out of this world. It has been a week since our special day, and we still have guests reaching out to us about it. We had a very specific design in mind for our cake, and she was able to execute it perfectly; it was so elegant! In addition to our cake, Emily also made us lavender lemon macrons for our wedding day... we can't wait to be in NC just to order more. Her communication and kindness are also wonderful. Thank you so much, Emily! You really made our day even more magical.

    Emily did a beautiful job with our wedding cake. It was very simple and probably not the most exciting to make, but we so look forward to having it again for our one-year anniversary. Thank you, Emily!

    Emily's cake was a huge hit! Seriously had guests raving to me weeks after the wedding about how good it was. Only wish we could've tried more of her flavors - would've preferred a true wedding cake tasting instead of being so limited to just a few. But overall great to work with and a delicious product!

    We had a full dessert spread at our wedding on Oct 1st at Overlook Barn. Emily went above and beyond to accommodate our guests’ dietary restrictions (vegan / GF) all while keeping the taste and appearance of the desserts! Our guests raved about the cakesicles and everyone went back for seconds! We appreciated her willingness to set up our displays the pickup / dropoff of her trays was extremely simple! You can't go wrong with Choice Cakes!
