I am a self-taught home baker and proud mother of one. My journey began as a paralegal, but everything changed when I baked and decorated my first cake in 2014 for Ella's 4th birthday. I wanted to create a memorable experience for her party, and little did I know it would ignite a deep passion within me. Soon I found myself baking for friends & family. Before I knew it, I had developed a substantial customer base. Over the years, I have come to realize that baking is a pure and simple expression of love and joy for others. In January 2020, I made the bold decision to follow my passion and pursue my dreams in the world of baking.

The Original Rainbow Cone has been a staple in Chicago for over 95 years! Molly’s Cupcakes opened in 2007 in the heart of Lincoln Park, Chicago. Within 2 years of being open, we won the Food Network Competition Cupcake Wars! This love of cupcakes started when the founder was just in third grade. As John grew older, Molly’s care for her students never left his mind. He decided to open Molly’s Cupcakes in her memory. My name is Karen & I’m the face behind Rosita Pink Sweets (no, my name isn’t Rosita - but that’s a story for another day). So a little about myself; I sold my first cake in the summer of 2016 to a family friend who needed an emergency cake after forgetting to order one. The thought of selling my own products quickly became a constant goal in my mind. After a few years, I earned my Culinary Arts/Baking & Pastry degree in 2020 and my Business Management degree in 2021.

I made my first fondant two tier cake for my son’s 3rd birthday. I honestly did it because I did not know of anyone at the time who would create a cake like that for me. I did not know that doing that one cake would begin a new journey for me. With the strong support of my family and friends, I have been able to turn this hobby into my own little business from my own home.
