My name is Karen & I’m the face behind The Pink Cupcake. So a little about myself; I sold my first cake in the summer of 2016 to a family friend who needed an emergency cake after forgetting to order one. The thought of selling my own products quickly became a constant goal in my mind. After a few years, I earned my Culinary Arts/Baking & Pastry degree in 2020 and my Business Management degree in 2021.

The Original Rainbow Cone has been a staple in Chicago for over 95 years! We serve our signature combination of Chocolate, Strawberry, Palmer House, Pistachio and Orange Sherbet sliced and stacked on a cone. We also offer other flavors upon request. As John grew older, Molly’s care for her students never left his mind. He decided to open Molly’s Cupcakes in her memory. I made my first fondant two tier cake for my son’s 3rd birthday. I honestly did it because I did not know of anyone at the time who would create a cake like that for me. I did not know that doing that one cake would begin a new journey for me. With the strong support of my family and friends, I have been able to turn this hobby into my own little business from my own home.
