I started my business in 2014 looking for work that allowed me to be creative. I’m inspired by magic and fairytales! I love building relationships with my repeat customers and creating special things for special events.

The Gingersnap bakery is located in the business district of the village of Phoenix. We specialize in custom cakes and pastries. We love creating unique sweets that reflect the happiness of your celebration. We can pull inspiration from your wedding design elements as well as you as a couple!

We began as a concession company providing cotton candy at sporting events. In the fall of 2021, we extended our brand by starting our own manufacturing plant. Sweet Buckets was born as an option for customers and businesses to purchase Cotton Candy and Gourmet popcorns direct from our company.

What's Poppin, a Chicago-style popcorn company, is based locally out of Albany, NY. We make all of our popcorn on premises by hand, by real life popcorn enthusiasts. Enjoy our traditional flavors like Moo-Vee Butter or our signature Albany Mix (cheddar and caramel) or take it up a notch with Deathwish Coffee Mocha. We do it all.

I took my first cake decorating class in 1999. I absolutely fell in love with cake decorating from day one and, over 20 years later, find myself just as passionate about decorating as I was in that first class. In 2015, I reached one of my biggest goals as a cake decorator, and proudly have my own commercial kitchen. I have made hundreds of wedding and specialty cakes through the years. The Cake Shop, is a Cake Studio that offers Wedding cakes, Custom cakes, and a small variety of bite sized treats. Everything is made from scratch in house and with localey sourced ingredients when possible. The Cake Shop is not a retail bakery. We are by appointment only. Sarah & Simon Cake Design is a custom cake company based in Brooklyn. We specialize in unique and artful designs to create truly one-of-a-kind wedding and celebration cakes. Pulling from her background in fine art, Sarah approaches cake design from the standpoint of an artist to inform the way she composes and creates edible work. I was 8 when my mother signed me up for a cake decorating class. It was a life-changing experience. I knew what I wanted to be! Determined to attend the Culinary Institute of America, I convinced restauranteurs in the Rochester, NY, area to give me a chance and started baking "professionally" at 15. Five years later I did it! I graduated from the Culinary Institute of America as a pastry chef. In 1999, Gourmet Goodies was established in Victor, NY. Over the past 20 years I have had the privilege of providing wedding cakes and gourmet pastries to the upstate and western New York area.

My name is Rachael Rapoza and I am the founder and one woman behind my business Roc'n Cakes. I started Roc'n Cakes in April of 2020 when the pandemic was underway and I was out of work in the restaurant industry.
