I quickly learned that it’s not just about having fresh fish anymore. Sushi dining has transformed into a culture. A culture built by imagination and creativity. Spencer has loved food and the way it brings people together since he was a little kid, helping his mom in the kitchen. Spencer’s first kitchen job was at a french restaurant (Le Bilig Kitchen) in Auburn! Spencer is a classically trained chef and went to culinary school in Upstate New York, at the Culinary Institute of America.
