Chifa is a fusion of Peruvian and Chinese Cuisines. 100,000 Chinese Immigrants arrived in Peru in 1849 to work in sugar plantations, mines and to construct rail roads. The first Chinese-Peruvian fusion restaurants were opened in Lima around 1920. Since then, the popularity of Chifa has expanded outside “Calle Capon”, the Barrio Chino area. Chifa combines food traditions of the Peruvian Creole culture, traditional Cantonese cooking methods, and Peruvian ingredients.Because of its popularity, Chinese food began to influence traditional Andean and coastal dishes, and over time Chifa emerged as a new authentic of Peruvian food.
Peruvian creole food has preserved the art and culinary techniques of ancient generations. A good example is “carapulcra” of Andean origins. It first appeared during the Inca times, and it's name comes from the Aymara “gala phurk’a” which means “to cook on stones”. This dish is based on dried potatoes, pork and aji panca.
Italian cuisine influenced Peruvian dishes and its culinary style. Peru in particular received a large migration, mainly from Genova. Peruvian cuisine owes its first legumes such as Broccoli, zucchini, chard, cauliflower, and eggplants, to the Italian immigrants. Pasta, the other big contribution, was adapted in various ways, the best example being “Tallarines Verdes” (green noodles), the Peruvian version of Pesto Pasta.

It is believed that the Spanish, upon landing in the Caribbean, used the word “barbacoa” to refer to the technique the natives used slow cooking when preparing proteins over a wooden platform. This culinary technique was well established in the US, primarily in the South, where pig meat was broadly consumed. Fire, smoke, rubs and sauces make BBQ special and particular to the region where it comes from. Mikasa uses many spices and peppers from Peru to give it a special and delicious taste!
Mikasa Nikkei is a new concept and style of food in North Carolina. It brings exciting and unique flavors from the Peruvian-Japanese fusion born in Peru at the beginning of the 20th century. It adds to the diversity of food and culture so loved and welcomed in Asheville, NC, a city of foodies and enthusiasts of new cultures. We want to add Peruvian-Japanese flavors to the extensive culinary culture that already exists in this beautiful city, and work with local farmers, not only to adapt their products to our dishes but also to grow our Peruvian Chilis, potatoes, etc. in the local farms.

Chef Jaz has always had the dream of operating her own restaurant or food truck one day. Jazmine spends most of her time creating and cooking dishes to perfect her craft.
