Edwin and Meredith met while working at the Charlotte Convention Center. Meredith remembers meeting Edwin for the first time and thinking he had a lovely smile and liked his cologne, and Edwin does not remember the interaction (haha). The two first hung out on their friend's anniversary where they salsa danced the night away. Edwin stepped on Meredith's toe while dancing, and offered to pay for a pedicure for her the next day. The second date was secured, and the rest is history!

Edwin booked a romantic 5-course beach side dinner for the last night of their vacation in the Dominican Republic. Looking back, there were definitely signs that the proposal was coming, but thanks to Edwin deflecting the night before by saying that "a vacation proposal was not happening", Meredith was blissfully unaware of things happening. Upon sitting down at our beach side table, the server and Edwin spoke Spanish and chatted about how the proposal was going to happen. Eventually, the server asked if we wanted to take a picture, and posed us in front of the water. Edwin told Meredith to look at something to the right, and when Meredith looked back, Edwin was down on one knee. Edwin claims it took awhile for Meredith to answer, but the whole video is 12 seconds long. We spent the evening chatting about how excited we were and hardly ate our dinner.
